About Me

I’m a twenty-something vegan athlete completely obsessed with running, biking, swimming and peanut butter. I live in Saint Petersburg, Florida with my amazing fiance, Patrick and a crazy little poodle, Harvey.

I graduated from the University of Central Florida with degrees in Hospitality Management and Criminal Justice. Two completely opposite industries, neither of which I am pursuing a career in.

After spending the better part of the last decade in the Hotel Industry I took a huge chance and pursued a new opportunity in marketing and events for an insurance company. I love what I do and am lucky to have found something that allows me to be a total 9-5 nerd Monday through Friday and marathon/tri-geek on the weekend.

I started running in 2009 after getting involved with Team in Training. I trained for the Nike Women’s Half Marathon in October 2009. It was a love at first sight kind of attraction to the sport and since then I’ve completed half marathons, triathlons, 2 full marathons, an Ironman 70.3, an ultra-marathon and many other running races of all distances.

Another passion of mine is travel. I’ve traveled throughout the United States, Caribbean, and much of Europe. I spent my last summer of college at Apicius International Hospitality School in Florence, Italy for a culinary study abroad.

I adopted a vegan diet through a very slow progression and a lot of trial and error. Initially searching for a “cure” for my ever present stomach issues, I found that a plant-based diet actually worked better than any medication from the long list I’d been prescribed. You can read my vegan story here. Patrick, on the other hand, is and always will be a meat and potatoes kind of man. Although our diets couldn’t be any different he is my biggest support and always up for a new recipe.

I also must add, we are both peanut butter addicts. After the majority of our first date conversation turned into a “who loves peanut butter the most” contest I knew I’d met my match. It’s become a running joke that we fell in love, and peanut butter.

  1. Tori I love this blog!!!! I’m so happy and inspired. I completed my first Ragnar this year- hoping to complete my first half marathon too, and maybe some day I’ll actually learn how to swim well so I can make an attempt at triathalon’s.

  2. I just found you through Callie’s blog, and I’m so glad I did! I recently moved to Tampa, and have been trying to make some friends in the area through blogging. I’m a triathlete who first got into the sport through TNT too. I have a SERIOUS obsession with peanut butter as well:-) Would love to meet up sometime!

  3. You don’t know how much I LOVE THIS. I also am IN LOVE WITH PEANUT BUTTER. But I can never control myself when I eat it so I have to limit myself as much as possible. ;)

    I would love to get into biking… any insight on which bikes work best?!

    I am just getting into yoga… and I am falling in love…

      I guess It depends what type of cycling you’re wanting to get into (Mountain, road, triathlon)?

      Im looking at possibly getting a new bike myself. I started with a Specialized Road Bike and loved learning in it but 2 years later Im wanting something a bit more efficient for triathlon.

I live in Orlando but I’m in St Pete CONSTANTLY (my boyfriend’s family lives in old northeast), so your running pics from the pier and coffee pot totally made my day! (And made me dread the 9.5 miles I have coming up there this weekend…eek!) At any rate, it’s so awesome to “meet” you and I can’t wait to read more about your adventures!
